The grape harvest has just come to an end among the vineyards of Corte Leonardi. 2020 is a good year for quantity and quality of the grapes we will use to make our Traditional Balsamic vinegar of Modena at Acetaia Leonardi, along with all our other balsamic specialties.
According to the tradition handed down by the previous generations, the production is made with Grape musts from Trebbiano and Lambrusco varieties. The bunches are picked manually and squeezed softly to obtain the must which is then cooked slowly following the rules in force.
This is a pleasant time to discover and explore the scenery of Corte Leonardi, to indulge among the red and yellow vine leaves coloured by the autumnal sun. Soon the winter and its typical fog will activate the fermenting process to turn the musts into vinegar.
